Mint and Lemon Meringue Pie ?  Don’t worry!

I did not make a mint lemon meringue pie!!

The only thing these 2 things have in common is they are both flavors that I LOVE!!!  2 of my favorite products are made with these flavors!!  They are healthy, low sugar or sugar free, delicious, heavenly, yummy and tasty!  The makers of these 2 wonderful products are not paying me to say great things ~  I genuinely love them and want to share my favorite things with you!  These 2 products are my assistants in  my attempt at eating more heart healthy!


MetroMint  Peppermint Water

I discovered Metromint water 2 years ago… and I have been addicted ever since!

Tiny confession ~  (sorry metromint) =)  They do have many many flavors of mint water, lemon, orange, chocolate, spearmint, and a red bottle (cranberry?)  … I only love this one flavor!  Prices range from $1.25 to $1.99 a bottle.  I like to buy them on sale at Safeway for 4 for $5.  World Market also carries them in packs – which takes the price down to $1.25 a bottle also!  I usually cut the bottle in 1/2 or 1/3 and top up with plain cool water.  Sometimes I am not in the mood for the strong minty taste … and I feel better about the price that way on a single income!  =)  But there are days that I just want the strong minty taste and drink it straight up!  I often ‘force’ my friends to try it when they visit me!!  I have had a few converts!!  If you like mint ~  give this water a try ~  I LOVE that it is not only delicious and refreshing but it is sugar free!!  Huge plus!!

Lemon Meringue Pie ~ not exactly!  =)

Yoplait makes these amazing Delights Parfait yogurts!  I have tried 3 of the flavors ~ again ~ I only love the Lemon Torte!   100 Calories ~ Lowfat Yogurt.  I am not a huge fan of  processed sugar substitutes ~ in moderation it is “OK” in my diet ~ especially when I love love love the taste!  Yogurt has so many benefits that I could not resist trying it ~ and I am so glad I did!!  It has become a daily treat!  Yep ~ treat!  It is so yummy it is like having dessert!  I am currently trying to drop some weight off my ‘middle’ ~ doctors orders~ my cholesterol is WAY too high~!  Dr. Oz on RealAge.com recently promoted that eating 2 yogurts a day can help you loose weight… so I am giving this a try!  (the problem is I have to behave with the rest of my diet!  ha ha!)  Anywho~  The delights are carried in most grocery stores 4 for $3.99 – but I always buy them on sale!  =)  3 for $5.  or 2 for $4. are the lowest I have found them at Safeway and Fred Meyer! Oh – Wanna see the picture now??

Speaking of these 2 yummy food products ~ I think I am going to go have a slice of toast and a lemon delight!  =)

Yeah!!  My post hit the web by 9:15 am!!  Good for me!  baby steps to getting ahead of the game!

Today we have sunshine in Washington!  The weather man even said we might hit 60 degrees!!  Since we don’t “get”” to have any snow this year ~   I love it!

Pain… did I mention the dental torture – giving me a bit more pain than I had hoped for … rude!

Parenting…. yep… I signed up for that!

Housekeeping… ya know… cooking, cleaning, laundry, dishes, dusting …. oh who am I trying to fool… I hardly do that anymore!!! (get a grip Jenn, get a grip!)

How could I forget…. Sewing… have you ever tried to sew little tiny hearts on your sewing machine??

Drama… always a little drama… this week my son slammed his little finger in the door…. maybe we should have gone to the doctor on Friday … I think we will be going tomorrow… its not pretty…. can’t wait to spend our deductible for him to tell me I am just worrying too much!

Mrs. McFunny’s Five Question Answers

You see my hubby is Mr. McFunny .. so that makes me the Mrs!  =)


1. What is the one thing your love does for you that you can’t live without?

Mr. McFunny brings me hot coffee in bed most mornings… this is how he wakes me!  I tell him he is raising the bar for other hubbys and he will get beat up for it…. but he loves me and he can’t help himself!  Or maybe, just maybe he knows it is the only way to get my lazy bones out of bed, I dunno?!  =)

Wait he does dishes too… I love that he does my dishes for me (most of the time) =)   have I ever told ya… I would rather dig a ditch or clean a toilet than do those nasty repetitive chores like dishes and laundry!!??    I mean where do they come from anyway… didn’t I just put them away?!


2. When did you know your love was “the one”?

Honestly, um…  I don’t remember!!  ah!!!  It was all so fast and blissful!!


3. Does your love have a special ringtone on your cell?

Nope!  I am lucky to even carry a cell.   LOL!  I barely use my pay as you go phone.  When I am going out  or driving, I am out or driving!   When I want to ‘get away’  ~ I really want to be away!  Though I do like having one to check in if I am running late!


4. What are you attracted to most in your special someone?

Those darn baby blues!!  And that never ceasing sly sense of humor!  Mr. McFunny has a sly sneaky quiet way with words ~  most people can’t resist the laughter that follows his words!  I am proud of him for his amazingly  sly, quiet, never crude, funny sense of humor that captures  smiles and laughter of many!


5. Did you know when/where he/she was going to pop the big question?

He hates it when I tell people I did… I knew he was late picking me up for our ‘hike’ to the waterfalls because he didn’t know that Costco opened at 11 on Saturdays.  He was supposed to pick me up at 10.  I also knew he waited until the last minute to buy my ring, because he is just like that.  I knew that He didn’t have a Costco card so it would take longer to pick up my ring than he thought… I just knew he would finally cave and buy me the ring I wanted at Costco because it really was “the one” I wanted!!  And every time his sister (whom I lived with) would say… “Where is he… he is never late” (true)  I smiled… I “knew” where he was.. I was perfectly happy he was ‘late’ !!  Not to mention the guy was so nervous he had that furrowed brow he always gets when he is nervous or frustrated!    He hates that he is so predicable to me!  =)

We have a full weekend planned of cleaning, decorating, baking, crafts, and just this wee little sewing sleepover party for charity!   I am excited about this little sewing party my daughter and I are hosting!!  With permission from the mom’s ~ I will post about it next week!  I can’t think of anything sweeter to me than spending Valentines Day with my little girl and friends ~ sewing little pocket sized hearts with love for a Children’s Charity on Valentines Day!

(well… it is lacking romance… but love is not always romance, right!)  ha ha

What do Beef Stew and Fruit Loops have in common?

Today is my “Think Food Thursdays”  – every Thursday I try to post about Heart Healthy Foods.  “Try” =)

Yep ~ I confess ~ I have fallen off my mostly heart healthy wagon this week ladies!

Who can blame a girl after 2 root canals and 2 crown preps in 8 days!!   I needed comfort ladies! Once my jaw was a little less traumatized and I could actually chew ~ I needed to lean on  comfort foods … have you guessed yet?

When you think comfort food … you might be thinking yummy hot corn bread, or home made beef stew, or tomato rice soup with grilled cheese,  or a big warm yummy  sourdough bread bowl full of hot clam chowder … right?!   I do love all those things!

Thats not exactly where I was at this week!

Now most of y’all probably love ice cream too right?  Right!  That is comfort food too!  What girl doesn’t crave ice cream at night after the kids have gone to bed, right?

Nope ~ not me!

Now don’t get me wrong, I don’t mind ice cream ~  especially on a lovely hot summer day after you just spent a few hours playing in the sun on Cannon Beach!    Oh, right ~  Nope not me!

No ice cream for this  mama ~  am I driving you nuts yet?  Are you wondering what on earth gives this girl comfort at night after a long week??

OK… OK…

One of my favorite (late night) comfort  snacks food is….

As you can see… I couldn’t even wait for the kids to go to bed… I was that weak!

They are not exactly healthy ~  but I love them ~ I really really do!

I  have a great picture of my son at 18 mo. carrying around a huge – yep – huge – economy sized box of fruit loops  !  He waddled down the hall with them with one arm around the box and the other either in the box or in his mouth!  Too funny!!  Not that I allowed him to run around with a giant box of fruit loops all day… I just had to ‘seize’ the moment with the camera … before I took away the giant box of fruit loops and entered into a meltdown!  If I can find that sweet  picture today ~ perhaps it will find its way into this post later!!

For the record I did make a delicious yummy beef stew and cornbread this week too!  Because it really is one of my ‘comfort foods’  and yep… I even made tomato rice soup out of a can too!  What I can say ~  it was a comfort food week!

Confession again - I did use a boxed corn bread =) it was a long week!

(I did edit this… but it is not staying upright for me?!)

Would you like my cooking tips on how to make this yummy stew?

I am no chef – but this turned out very yummy!

First I marinate beef stew meat in Cabernet red wine for an hour-ish!

While the beef is marinating I peel and chop a few potatoes any kind! Chop carrots, celery, 1-2 yams, mushrooms, purple onion, and peel 5-6 garlic cloves.  Pull out the herbs … oregano, basil, rosemary, thyme, sage… Italian herbs.

Brown Beef in the extra wine - I don't use flour at this stage.

I boil water in my trusty kettle and pour boiling water over the browned beef – filling the pot 1/2 full. Bring it back to a boil in the pot, stir and then turn it down to low and cover.

After all the veggies are cut - I saute the onion, mushroom, celery, garlic cloves, and herbs for a few minutes in olive oil to bring out flavor? =)

Put all the veggies into the pot now…including the potatoes & yams, etc. …    bring it all back to a boil… and turn back down to low and cover – again.

I love using Better than Bouillon Beef Paste... yummy flavor! Adding a can of Italian tomoates and a can of sweet corn also enhances the flavor!

oops! I add these just after I have added the veggies and turned the pot down … be sure to stir until the beef paste is melted ~ OH ~ and this is also the time I add a few tables spoons of flour to cold water into a small cup … mix it with a fork until it is not lumpy… then stir that into the stew!  and  then cover and simmer for a 3/4 of an hour.     Make Corn Bread at this point!!!   Beef Stew is just not complete without corn bread in my house!

It was so delicicous ~ I wish I had more!!! sniff... bye bye beef stew!

OK… I think I covered it all! It is late morning… I am late late late posting … have you figured out that I am not overly timely yet??!! One day I will be a day or two ahead! One day! =)

*Kid Friendly* Photo Memory Book Craft Perfect Gift for Someone You LOVE! =)

Since I posted the wrong McLinky post today … OOPS!… I decided to not do the Proposal McLinky (my story is way way too long anyway.. I tried!)  =)   So.. Tuesday’s Post attempt #3!  I will actually ‘link’ Wednesdays post to MamaM.’s McLinky tomorrow .. when it is supposed to be linked… some of you got a ‘sneak peek’!!

In honor of Loving this week ~ Loving your puppy that is! ~  My little girl (age 9) and I made the cutest little photo memory book craft ~ out of lunch bags ladies!  yep… lunch bags!  This brilliant little scrapbook idea is compliments of my sister KK.  Thanks KK!  =)  It is a perfect little gift to give someone you love… or make and fill with photos of someone (or a pet) you love!

The lunch bags have ‘open ends’ where you place scrapbook ‘tabs’ inside … too cute!

Didn’t she do a great job for her 1st scrapbook ever!?? Proud Mommy! =)

Isn’t it just the cutest scrapbook ever!! Now you want to make one… don’t ya?? Wanna know how we did it? =) Easy sneezy…lemony squeezy! My favorite quote from my little girls first grade teacher! Here is what you need!

2 lunch bags – folded, flip one backwards so the open ends are not on the same side and staple together, a few cute scrapbook papers, a bone cookie cutter to trace – for puppy books, stickers, a used gift bag (hee hee) and some scrapbook adhesives, we also used adhesive ribbon. You can be so creative ~ and yet so simple! My little girl Loved This craft!! She loves photography ~ and animals ~ and is quite the little paper crafter (oh the tape and paper my kids use!) She had SO much fun ~ she was beaming with pride after making such a stunning little scrapbook!

She actually made this craft for a Girl Scout project… she is leading this “Pet Craft” for a younger troop tomorrow and in May she will lead the same pet craft with her troop! So if your little girl happens to be in my little girls scout troop (Tammy) hee hee … maybe you don’t want to make one yet!?!~

Wednesday’s Word ~ Weddings ~ Its a Love McLinky thing this week!

OH How Embarassing!   ok… so a blond walks into a blog hop last night … on painkillers and thinks she is being clever posting the ‘night before’ … and she posts for Wed. instead of Tues!!!  =)  can I do that?  Did I mention I was on pain meds?!  sigh..

My favorite Wedding Day Moment?

The day Mr. McFunny and I tied the knot seems so long ago now ~ 11 1/2 years ago ~ I think!   I loved that day ~ I love thinking about that day ~ and talking about that day ~ and though I could  go on and on and on about the moments that I love love LOVED on our wedding day ~

I am gunna hafta do that another day… you see … I had another root canal today and I am barely up for posting a blog before I take my lovely pain killers and find my pillow! =)

So I am just gunna tell you about one short sweet moment ‘that’ day!

The wedding was over… jitters were gone, vows were made, tears of joy and laughter were shared, photos were taken, food was yummy, the cake was amazing!, bubbles were blown… the fire in the men’s bathroom was out… =)  Anyway ~ We decided to spend our first night as Mr. & Mrs. in ‘our’ condo!  Not in a hotel where many other newlyweds had spent their first nights…ew!   So we drove away from our wedding in Mr. still handsome in his Tux and me all pretty in my Big Ol’ Gown (still not sure why I didn’t go simple like I always dreamed I would!) anyway… it was a 45 minute drive ‘home’… in our little white VW… which we managed to ‘keep away’ from wedding vandals!  It was a wonderful ride home …full of laughter and smiles… from us and everyone who noticed we were newlyweds.  We parked our car in the garage of our rented condo … we rode the elevator up to ‘our’ condo feeling very blissful … of course my gentlemenly ‘lean’ (skinny) man tried to carry his new wife through the door (glad we were the only ones in the hall!)  Though I did way less than him at the time… my dress was Very VERY Heavy!  it weighed many many pounds!!  What a task!  (hee hee)  We laughed!  The door closed and we were standing there in front of the giant mirrored doors and said… “hm… so this is what we looked like all day aren’t we looking fine” … =) Priceless moment!  So we sat on the floor …the two of us… in our wedding clothes feeling blissful…enjoying a few moments together and ALONE  in our fancy clothes!  That was my favorite moment on my wedding day! Honest!  Well….. ok… there was another very very VERY funny moment that day… that I loved… but few will be lucky enough to ever know ‘that’ moment!  =)

How I met the Love of My Life …it’s a McLinky thing…

Just a quick note to fill y’all in on a little ‘secret’ … I …um… well… I am having root canals and crowns put in … a lot of them! sigh! ouch … both physically and $$ (hee hee) ! This will affect my posts by hours or days depending on the level of work being done that day! Since ya all know my little dark secret… I hope you understand if I am not exactly timely in my posts … or my hoppin around visiting y’all! I had some crown prep done this morning… and they are sending me for a second (unexpected root canal today… sigh!) so I am leaving up my love story another day… hoping this one goes better than last week and I will be right as rain tomorrow! 😉

How I met the Love of My life!?

My hubby is a coder.  He loves code.  He is a computer genius.  For this he gets paid. (and He really comes in handy when you are not so techy yourself!)   Mr. McGenius I like to call him.  But… What I love about Mr.McGenius ~ he can make just about anyone he meets laugh!  He quietly captures the most unsuspecting person into laughing before they know what hit them.   Have I mentioned before that I LOVE to laugh! Laughing is Wonderful!  Food for My soul! I love saying “my cheeks hurt”… I love the uncontrollable feeling, I love wiping tears from my eyes after a good gut belly laugh!  OK… ok…

How did I met Mr. McFunny anyway.  =)

A few friends and I were going to a Passover Meal at church.  My roomy invited friends from University in BC, Canada.  They came ~ a little late and met us there.  The Passover meal is a beautiful representation of the meal containing symbolic foods used by Jews during the Passover Seder.  It has a  special significance to the retelling of the story of the exodus from Egypt, which is the focus of this ritual meal.  It is a beautiful way to understand this part of Biblical History … this church hosted the meal every year at Passover time in Israel.  We were all singles in our 20’s… taking this special event seriously.  This was not our first visit ~ we knew we need to listen to the ‘leader’ and follow along.  There were about 100 people at the dinner I think.  So …in come our friends from BC and their guest “Mr. McFunny”.  They sit down, try to do quiet introductions and then Mr. McFunny (who is sitting in front of me) picks up his water glass …which has had time to ‘sweat’ a little … it slips from his fingers, he fumbles the glass just like a football, the glass hits the edge of the table and the whole thing goes sploosh in his lap.  Our mouths hanging open, waiting for this poor ‘new’ guy to recover from this embarrassing moment… nope… not Mr.McFunny… He leans over and quietly but cleverly tells us “it is a good thing this is a long dinner so his lap will have time to dry off before anyone notices he has wet pants!”  Then the laughing started… oh the laughing… cheeks hurting, gut belly, loud, I cannot stop laughing… laughing.   I really could not tell you another word he said that night… just that he had us all in fits of laughter the rest of that dinner!   Remember the ‘serious’ dinner where we are supposed to be paying attention to the leader explain all the symbolism of each food on the plate??   I LOVE to laugh… and though we felt horrible for being so disruptive … so childish ( and fun!)… we could not help ourselves… everything that came out of his mouth was so darn funny!  We got looks and glares and we were shushed… but on we laughed.  Shameful singles!  After dinner we all headed over to a friends house … 20 or so of us… and the laughter carried on all night.  Mr. McFunny was SO funny!

The next day our BC friends and Mr. McFunny left to go camping on the Oregon coast … but planned to quickly stop in on their way home from camping.  My roomates and I come up with this plan to introduce him to our ‘other’ funny friend… surely he and she would hit it off… as they are both witty and funny!  Monday arrives and we have successfully planned for her to be at our house when they ‘swing’ in… hm… Never Never try to match 2 funny people up… never.  Lets just say it didn’t go so well.  They left and we did not see nor hear about Mr. McFunny for 3 years??  ish?  We saw our BC friends… but Mr.McFunny had become a memory of that funny night.

Fast forward 3 years…. to the long weekend in January 1997.   (Mr. McFunny and I have a history of ‘memories’ on long weekends… odd really)

I was in a bit of a funk… a long-ish lasting… sad funk.   I was having a giant pity party for myself and about a ‘friendship’ that never turned romantic.  My roommates did not know what to do with me… as I was usually the happy go lucky kinda gal… so my wonderful roomy decided to ‘take me out of town’ and  ‘get me away from it all’… of course she picks our BC friends to go visit!  and she had this ‘brilliant’ idea of asking them to invite Mr.McFunny over to make her sad roomie laugh and forget all her troubles… (that would be me… the sad pathetic roomie!)  Since this story is getting ridiculously long… Let’s just say… Mr. McFunny made me laugh… and laugh… and laugh… and he left that night with a smitten feeling.

As God would have it… we visited BC for unusual circumstances in February, March and April… and oddly enough Mr. McSmitten was there every time!  oops… I mean Mr. McFunny.  You see he was in a bible study with our friends and each time he learned I was going to be around… he ‘showed’ up…   I am so glad he did!  =)

In late March or early April he bravely asked for my email… thus it began… ‘getting to know you… getting to know all about you”  ~  Every night and every morning “You’ve Got Mail”… it was addicting… and besides.. he made me laugh!  and we all know I LOVE to laugh!  The rest is crazy love… and that my friends…  is how Mr. McFunny won my heart… by making me laugh!

I told ya ~ I love to laugh!!!

1. What are you most afraid of?

Honestly – besides creepy, crawly, hairy, scary spiders! – I too most afraid of dying before I get to see my babies grow up to be cowboys (oops … slip! I am a closet cowgirl !)  Seriously – its a mental thing for me – after a few medical .. um… challenges… its an honest unhealthy fear!  My brain goes places it ought not be visit on a far to regular basis!!!

2. Do you use a flat iron or curling iron?

Do I have one or own one?? Yep I own a flat one – only used it once!?!  I donated my curling iron in a brown bag this week!  buh bye!  Those irons rarely make it to my head out of complete and udderly ridiculous lazyness!  and lack of knowledge on how to make myself look pretty using that flat one!  I will figure it out…. One day!

3. Hands-free or phone to the ear?

On the ear baby!  (yep – terrified of those brain tumor words!)  Fear really is a good thing, right?!~ I use a pay as you go – cheap – not so techy – bottom of the line – no name – cheap phone – only when I ‘need’ it!  You will rarely catch this girl using a cell in the car or grocery line (sorry ladies its rude!)  – no really – I try to make car time ‘kid’ time – life doesn’t have to be so busy that I can’t listen to the radio or talk to my sweet little monkeys without being interrupted by a silly ring tone! 

4. Do you have a matching bedroom set?

Does the accidental fact that I happen to have all ‘black’ (cheap) furniture count???  I dream of creating a peaceful sanctuary bedroom – but – lets be honest ladies – it will never happen without Nate coming to visit me!!!  Come On Nate ~ lets make a date already!! 

5. Do you believe in the paranormal?

I am taking the 5th on this one… 5th Amendment that is!!!!  😉
